OMELET WRAPS: Ingredients

2 tsp. pine nuts
1 ¾ cups (400g) of fresh spinach
5/8 cup (125g) of tomatoes halved
1 tbsp. mild olive oil
1 tbsp. white wine vinegar
2 medium-sized eggs
1 tsp ground turmeric

WHAT YOU NEED TO DO:

Place the cottage cheese, watercress, and lemon peel in a high bowl, and puree with a hand blender (or food processor) until a smooth paste forms. Meanwhile, beat the eggs with the milk and herbs in a separate bowl. Heat 1 tsp. of oil in a medium-sized frying pan, and fry 1/4 of the egg mixture over medium heat for 2 minutes, until the egg solidifies. Then, turn it over and cook the other side for ½ minute. Remove the omelet from the pan and set it aside. Repeat with the rest of the oil to fry the remaining omelets. To serve, spread the cottage cheese paste over the omelets and top with smoked salmon. Finally, roll up the omelet like a wrap and cut it in half.
